Ingredients

  • 2 medium fennel bulbs (about 14 oz. in total)
  • 3 parsley sprigs
  • 2 onions
  • 1 garlic clove
  • ¼ cup olive oil
  • 1 lb ground meat (mixed)
  • Salt & pepper
  • ⅔ cup vegetable broth
  • 1 cup heavy cream (or plant-based cooking cream)
  • 8 sundried tomatoes

Instructions

  1. Wash the fennel, quarter it, and remove the core. Then shave it into thin slices.
  2. Wash the parsley and chop it finely.
  3. Peel and chop the onions and garlic.
  4. Heat 2 tablespoons of olive oil in a pan and brown the ground meat for about 8 minutes.
  5. Season with salt and pepper. Remove from the pan and set aside.
  6. Add the remaining 2 tablespoons of olive oil to the pan and sauté the onions and garlic until translucent.
  7. Add the fennel and sauté for 3 minutes.
  8. Deglaze with broth and cream. Bring to a boil and let simmer for 5 minutes.
  9. Cut the tomatoes into thin strips and add them to the pan along with the ground meat.
  10. Season the fennel and ground meat ragout with salt and pepper and sprinkle with the chopped parsley.
  11. Serve with pasta, rice, or bread.
