- 14 oz bok choy

- 1 tbsp canola oil
- 2 tbsp curry powder
- 1½ cups vegetable broth
- ¾ cup coconut milk
- ½ lime (juiced)
- Salt & pepper
- 1 bunch cilantro
Instructions
Start by peeling and finely chopping the ginger and garlic cloves. Wash the vegetables thoroughly. Thinly slice the scallions, and cut the yellow and red bell peppers and zucchini into strips or slices. Wash the bok choy and cut it into large pieces.
